The ingredients in this salad are so tangy that no salad dressing is needed, keeping the salad light – just how it should be. The sweetness of the red bell peppers complements the feta and cracked pepper so well. Has a kick – great for pepper lovers!

Breakfast And Brunch – Coconut Granola

A quick, easy, and very delicious recipe that can be eaten for cold cereal, topping on yogurt or even for a snack. Because it does a better job that honey, I use part maltose syrup (purchased at Asian markets) to help bind the ingredients together instead of using all honey. Virgin coconut oil has many healthy properties and enhances the taste of the granola, but if that cannot be found you can substitute it with any other oil. Enjoy!

Cheese – Fantastic Mexican Dip

This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

The bread machine does it all after you measure in routine bread ingredients and a cup of cottage cheese. You can cut fat and calories in this hearty loaf by using nonfat cottage cheese if you prefer.
